THESE JACK SKELLINGTON-INSPIRED PUMPKIN ONIGIRI ARE FIT FOR A PUMPKIN KING

Halloween season is here at last, which means it is time to sit back and chill with Tim Burton’s The Nightmare Before Christmas! We just love Jack Skellington and his kooky ways. For a healthy snack to take with you on your long night of trick-or-treating, try these Pumpkin Onigiri inspired by none other than the Pumpkin King himself!
Jack Skellington Onigiri | Serves 6
Ingredients
- For the rice ball
- 2 cups uncooked Japanese rice
- 2 1/4 cup water
- 1 tsp salt to taste
- 1/4 medium-sized pumpkin (Kabocha, also known as Japanese pumpkin, works best!)
- For decorating
- Black sesame seeds
- 1 large sheet of nori

Directions
1. Wash the rice according to the instructions.2. Place washed rice in a rice cooker and add 2 1/4 cups of water, or cook according to your favourite method. Wrap the dough in plastic wrap and refrigerate for at least 2 hours.
3. Skin the pumpkin wedge and cut into cubes.
4. Place the pumpkin cubes in a steamer and cook for about 8 to 10 minutes, or until soft.
5. Take out the soft, steamed pumpkin cubes and mash them up with a fork. Add salt to taste and ta-da! You have your spooky pumpkin filling.
6. Take out cooked rice and leave it to cool for 10 to 20 minutes before shaping your onigiris. Make sure it is completely cool before you take them in your hands!
7. Take a palm-sized portion of rice and flatten it out on your palm so that it looks like a rice patty. (Tip: Wet your hands with a little water to make sure that the rice doesn’t stick to your fingers!)
8. Place a little of the pumpkin filling in the centre, then fold in the edges of your rice patty until all of the filling is covered. Shape it well so that your rice ball is round like Jack Skellington’s head!
9. Repeat the steps until you get 6 rice balls.
10. Decorate your rice balls with seaweed. Cut a long, thin strip for his mouth and shorter strips for the stitches. Then, cut two small ovals for his eyes. Finally, use two black sesame seeds for his nose.
11. Plate them and enjoy this healthy snack that is perfect for Halloween – and after!
